Egg Substitute For Lasagna
What if you don't lay eggs in Lasagna? 3
Eggs are only there to help you find ricotta cheese, and if you're making lasagna casserole, it's not really necessary. This is especially important if you are making lasagna in small squares (such as individual servings) with fresh flour because the cheese will run out on both sides and will look less attractive if you do not add eggs. It has little effect on taste.

I use one or two eggs to fill the ricotta between layers. It only helps to find the cheese. I have also used egg substitutes with great success.
