I'm having trouble figuring out if a molecule is polar or non-polar and why, so it would be great to explain how these molecules are formed.

The first two have hydration in the central atom. Subsets cannot be configured randomly. Molecules must be polar.
The third is also special. It is symmetrical and non-polar.
The fourth clock is in the axial position at a distance of F. It is non-polar.
These are not trivial matters.
Is Xeo4 polar or non-polar?
