Following or adding as a friend usually means they can see their posts and posts in their feed, and in some cases (like Facebook), they can see your posts. Depending on your particular privacy settings, removing someone from Facebook usually means you won't see their content and you won't be able to see any content they've posted. Unfollowing someone on Twitter is not mutual, so the person can still follow you and see your posts, but their posts will no longer appear on your timeline.
